There's a related error in my osTicket logs: "API Error (400) Unable to create new ticket: validation errors: user: Incomplete client information"
I can manually add attachments to Tickets.

I now believe these errors related to the basic auth deprecation at MS, rather than OSTicket. They have certainly gone now I have OAuth set up. Many thanks KTJ!

KevinTheJedi ahhh, no worries Kevin. Please update us when things get released. For the time being I have to open every ticket to myself then change the owner to get around the garbled first message issue.
Despite installing the new version, the issue still remains. Anytime anyone sends an email with an attachment, I get Excessive Mail Fetch Errors
I tried replicating this yesterday with Gmail and Outlook and every time a ticket was created properly.
You will need to post an example full, raw email for us to test with.

osTicket errors are logged in Admin Panel > Dashboard > System Logs. Any other errors will be logged in their respective places (eg. PHP errors will be logged in the PHP error logs, MySQL errors will be logged in the MySQL error logs, etc.).
