You can't. You can make it mostly Español by installing a language pack.
You can join the translation project at http://i18n.osticket.com/ to improve and/or complete your language translation for the future.
Otherwise you would have to locate where in the code to change it manually (which I do not recommend unless you really know PHP)

Te agradezco, más sin embargo ahora no me permite modificar los campos, me arroja este error al intentar cambiar Open por abierto.

Admin panel -> Tickets -> Queues.
Click on Open.
Change the name to Abierto.
Click save.
I just changed mine.
Al intentar hacer el cambio de Open, My tickets, Closed a español, me marca ese error

mremersaro what you edit in that folder you pass and ready. what you touch from the interface. You have to apply it to the other installation.
