How to edit Contact information<Forms) from Update form Selection

I would like to give a selection option of Email Address to Select by Users.
i.e:-

But when i am trying to edit Contact information<Forms) from Update form Selection. unable to delete or edit.

any impact to current form?

I would NOT recommend changing the non-editable fields. There is a reason they are non-editable.

Those fields are required for the product to function. Thus the ability for people to delete them or edit them was restricted.

You could probably achieve this by editing the core files, but you will be on your own to mod the product and we would not be able to assist you until you removed the mod if something else broke.
