It's been demanded by other users in the past -so I guess it might make sense to consider it-. I think it would be nice to add the ability to customize the statuses list for tasks, similar as it is working for tickets. Tickets and tasks users ARE different users, and hence different teams involved. Furthermore, it'd be great to add sorting and filtering throughout all these fields in the Tasks tab, similar to how it's available in Tickets.
