I'd like to ask is there a way to include / show in the reports the date and time when a ticket had been assigned / claimed or owned?

The Dashboard is very limited in the what you see is what you get way. So if you do not see something and woudl like to add it you would need to do one of the following:

  1. add the information you want by editing the core files.
  2. Invest some money in buying the 3rd Party Reports Plugin.
  3. look into rolling your own reporting plugin
