Perhaps this is already possible and I'm just not able to find how to do it (both exploring osTicket and google searching), but is it possible to have an Account Manager as an auto-collaborator? We don't want to have them auto-assigned as another individual will be performing the actual work, but we want them to receive all notifications for a particular organization's tickets. Thanks in advance!

Account Managers are Agents. So no not really.

Unless you create a User account for them also.
Then they could be added to the Organization and you add them as the primary contact and use Automated Collaboration: Primary Contacts.

Go to Agent panel -> Users -> Organizations.
Click on the Organization.
Click on it again.
Click on the Settings tab
