Is it possible to deactivate or remove the tab on ticket next to the ticket thread tab?
Also, can avatars be turned off completely?

You can disable an Agents ability to do anything with tasks. I do not know if this hides the tab though.

Admin panel -> Agents -> Roles -> the role you want to disable task permissions for.
Click on Permissions
Click on Tasks.
Uncheck everything.

I'm not aware of a way to disable the avatars/gravatar icons.
