I see that the Docs now have info regarding Custom Columns.

There is no mention of which version of osTicket the info pertains to though.
I assume that the Custom Columns info is specific to 1.11-RC1 onward. Please correct me if I am mistaken.
You are indeed correct, it will is in the 1.11rc-1 release and onwards. It's a really great feature and is actually very deep with queue/column customizations.

I would assume that the documentation is for 1.11.x
Both 1.10.x and 1.11.x actually. Everything pertains to 1.10.x and 1.11.x except for the Features section and the Upgrade Overview, these are both specific to 1.11.x only.
When we release 1.11.x stable officially we will update the version on the docs so you can choose from the 1.10.x docs or the 1.11.x docs.
