Currently in Admin panel -> Manage -> Ticket filters.You can choose any field that you have added to the built in Ticket Details form.

They have to be added to the built in Ticket Details form to be selectable at this time.
Would it be possible in the future to select costum flieds from the user details?
its my understanding that is the plan.
