I have a couple of users for which I would like to have their supervisors looped automatically in every time they open a new ticket. Is there a way this could be configured?

Via Organizations. Add the each user to a specific Organization and add their supervisors as org members or primary contacts and then enable the option to add as CC for all Tickets.

Okay gottcha, so there isn't a way to define this by user, right? Or I'd have to place a user alone in an Organisation and do the CC for all tickets setting
Nah there is no way to do that per-User. Automated Collaboration within the system is only available via Organizations at this time.
