I want to have a dynamic drop down field in the ticket view, where I can choose predefined projects titles. This project titles should be indivuidal per customer.
How can I handle this?

You will need to customize the code. You can create Custom Forms with Custom Fields and have specific Custom Forms for each Help Topic but that's the extent. If you want it based on the User then you'd definitely need to customize the code. The code is open source so you will need to do your research and make any needed changes. We don't have customization guides/docs so you are on your own.
