we have POP e-mail account to receive tickets like support@company.com (Microsoft 365 mailbox) and we want to set up SMTP with a different server/account (non Microsoft 365). We know that we can disable SMTP for support@company.com so we can configure a different MTA, but the problem is that we want outgoing emails with support@company.com address in "From" field; osTicket doesn't let us add a second email account (used for default MTA) with the same address of the receiving POP account.

Any suggestions?

So most companies will not let you spoof a from address like that to send emails these days.

I would think that If your just using the existing account for collection it really doesn't matter what the email address is in your configuration since it wouldn't actually use it to. You could change it to anything so its free to be used no the other account your setting up.

Thanks, your point on e-mail address of collection account is right: I've set a dummy address for that and then set the right one for the SMTP account.

I find this not much intuitive, but it works well.

Take care that I use different server for incoming and outgoing, but the outgoing one is SPF authorized, so I'm not having any security/spam issues. I think that many other people could have the same requirement (a different SMTP server/authentication from the incoming/POP ones).
