I've done some searching and can't find anything on someone doing this but wanted to bring it up here in case someone found a way to accomplish this and figure out if this could be possible or if not (which I know is the most likely scenario), the reason behind why not.
Essentially, I want to make use of the fact OST can be configured to fetch emails from a specific folder in the email account. This way I can (as an example) set up an IT folder and HR folder in the mailbox with rules to filtering emails into those folders based on the TO address being used, utilizing aliases. These would then be processed by OST and have tickets created in the correct department based on the folder the email was fetched from.
I am aware the simplest solution would be to create two separate emails for each department, and is most likely the path I will be taking, but I figured it doesn't hurt to ask.
