What better way can I use the example above?
being able to select more than one item from each list.

    robsonwr you can go to Admin Panel - Manage - Forms
    Inside a form you can create a new field with the type "Choices". Save and configure the option inside the field then mark the Allow multiple selections option and save it.
    Then assign the form to the layout so you can see the fields.
