Questions:- What would be the best way to change what is saved for the ticket object- How would you guys go by changing the look of osTicket, maybe using bootstrap.

This question is so vague that no one here could begin to answer it other than saying edit the css files.  Also you haven't told us that version of osTicket you are running.
