Yes this will work ;)
We do the same thing with our test environment sometimes with different osTicket versions (that do not differ on the database structure) to check the differences between versions.
But I am a bit unsure if it's safe to do this in productive environments, so I'd suggest to test it, but make and keep regular backups of your database (just in case...)
