I just installed OS Ticket and in the process of setting this up.It seems like the customer or person asking for support can only view the status of one ticket at timeIn our case, we need to be able to create accounts for customers and let them view the status of all their tickets. Is this possible?

Yes it is possible by default at least with the latest version of osTicket (1.9.2). The client/customer logs into osTicket and can see all the tickets he/she created under the "ticket status"/"tickets" page at the friend of the osTicket helpdesk.
