Hello,
I've added another email via the Admin Panel. It has the same settings as a previously configured account which gets fetched without issue.
Both the fetching and non-fetching accounts are Gmail. Can't think of anything I've missed or done in error. Suggestions? Steps and settings below. Thanks in advance!
1. Enabled IMAP in Gmail settings.

username: xxx@gmail.com
Encyrption: SSL
Enabled
outgoing:
host: ssl://smtp.gmail.com
port: 465
auth: yes
3. Restarted cron service (linux).
Sent several test emails but its been a few hours now.
