We have smtp server is physically diffenern that the mailbox servers. How can we configure OS ticket to use our mailservice. Is there a way to define incomming and outgoing mailserver separetly?

Not at the moment, no (though there may be a mod for this in the mods forum... check there). You could get around the issue by setting up your incoming server and then using PHP's internal mail function for outgoing mail.
