The instructions say to create a new database, but if I want to add this to an existing application, can I just point to that database during the installation? Thank you!

Yes, you can. As long as your tables name of osTicket is different from the existing one in the current database, you can point to that database. So, it is recommended to use the default table name prefix (in this case: ost_).
