Hello, is it possible to restrict the change of Priority the same way you can restrict Assigning people? If that is not possible with the standard code, would this be a big modification? Best regards Waczny

Not at this time, no. Depends; you'd definitely need to add a role permission, tweak the access control backend to, add the needed methods, add the needed checks, etc.
