Priority field is not used in my organisation. Is there any way to hide this field when raising the ticket?
To eliminate it completely you will have to alter the source code.
However, you can remove the 'Prioritiy columns from your tickets table view (/scp/tickets.php) in Admin Panel -> Settings -> Tickets -> Queues -> <queue_name> -> Columns
We dont use it much either, but I left it in just in case that changes in the future. We just ignore it.
