Other email accounts such as Outlook and Office 365 arrive correctly... they are readable...

Does this happen when an email is fetched into the system to create a ticket or is it when you send via SMTP?
Regardless, we have a huge update coming soon labeled v1.17 where we are ditching the old PEAR mail scripts and using laminas-mail instead. This has massive improvements in fetching and sending. So I believe this will address your issues going forward (once released).
