I just want to get a better understanding of how the due date is populated when the user creates a ticket through the 'client portal'?
Is there any way we can set a due date base on the 'Help Topic'?

Due date are set based on the SLA. So if you had a help Topic that you wanted a different due date calculation you would just need to create a different SLA and add it to that Help Topic.
