Change owner email from generic email automation

We have a form that users can fill out when requesting certain items that generates a ticket. Once received, it has to come from a generic email address but in the form we have the user input their email. Is there a way to have it auto change the owner of the ticket if it comes from a certain email instead of us manually changing it or before it creates the ticket it auto changes the email. We also have the users email in the title of the subject. I found a link on the forum but it is dead.

Set a Reply-To header in the email as the User's actual email address. Then using a Ticket Filter with the action of Use Reply-To Email it should match and use the Reply-To email as the owner (User) of the Ticket.

Ah, I didn't think of the headers. It is coming from Smartsheet which does not allow to change the Reply-To Header, it only adds the Owner of the sheet, instead of the submitter. Would there be another workaround like reading the subject line and the update?
