I am using osTicket with plesk. I have updated version of php on my plesk <screenshot attached below>
But my OSticket admin panel shows that my version is 5.x.x
I am unable to see assigned tickets in any of my agent accounts.

Sounds like you need to talk to your hosting company.
Plesk osTicket version 1.12 is not compatible with PHP 8. This works with lower version of PHPs.
Either you lower the PHP version or upgrade the osTicket that works with PHP 8.
If the osTicket version is upgraded on Plesk, please let this forum know how the latest osTicket was upgraded on Plesk for others to get updated.
You will get below error for version mismatch ---
"The app requires PHP version later than 5.4 but earlier than 7.1. Your PHP is 8.0.17. If PHP is not available, ensure that the PHP support is selected for the domain."

There is no such thing as "Plesk osticket version 1.12".
"Plesk is a commercial web hosting and server data center automation software with a control panel developed for Linux and Windows-based retail hosting service providers."
"osTicket is a widely used and trusted open source support ticketing system"
version 1.12 is ancient.
If you are using a third party (Plesk) application to install products then it is your hosting companies responsibility to configure their program to install a current version.
